1 whole butternut pumpkin peeled and chopped
3 large carrots peeled and chopped
2 large potatoes peeled and chopped
1 cup chopped celery sticks
1 teaspoon curry powder
1 teaspoon dry mixed herb
1/2 teaspoon powdered ginger
1 teaspoon chopped garlic
Salt and pepper as needed
1.5 L water
2 tablespoons olive oil
Stir fry the spices with olive oil in med heat until fragrant.
Add the pumpkins carrots and potatoes , mix well and cook for few mins.
Add the water mix well and boil for 20 mins with lid on.
Turn the heat off.
Let it cool for 20 mins and blend it with stick blender.
Serve with any bread rolls you like
