Tomato Rice Vietnamese Style

 

Ingredients:
4 cups uncooked Jasmine rice, wash twice and drain, set aside
A handful coriander leaves
3-4 cups of chicken stock or water (more water means softer rice)
4 tablespoons canola oil
3 tbs tomato paste

Spice paste:
(blend all the spices in the blender)
2 chopped roma tomatoes
3 clove of garlic
1 chopped brown onion
1/2 tsp turmeric powder
1/2 tsp mild paprika powder
1/2 cup water

Method:
In a large saucepan heat the canola oil over med heat,
Add the spice paste, tomato paste, rice and the chicken stock or water,
Cook in high heat till boiling,
Turn the heat down to low and cook  until all the liquid is absorbed.

-Take rice mix out of pan and place it to a steamer and put a handful coriander leaves on top of the rice, cook for 30 mins -stirring occasionally ( make sure the water doesn’t boil dry in the pan below )

This can be serve with:

Fried sunny side up egg
Cucumber and carrot pickle with coriander leaves
Fried Chicken -Ayam Goreng
Vietnamese Shaking Beef

(mix vinegar ,water and sugar to your taste requirement)
